What should I cook for my dinner tonight?
I have: A large potato (skin), a slice of bacon, cream (not sour cream), butter, crumbies, garlic, onion, tasty cheese, full of herbs and spices, olive oil, season and an "Easy Cook" oven (you know, the rounds circular can take everywhere.) Hmmmm.
Bacon Rosemary Mashed Potatoes * Ingredients 3 potatoes, cubed 1 / 4 cup butter * 4 slices bacon * 1 small red onion, minced * 1 clove garlic, minced 1 tablespoon chopped fresh rosemary 1 / 2 cup milk * salt and pepper to taste 1. Place potatoes into cubes in a pot with enough salted water to cover. Bring to a boil and cook until tender, about 30 minutes and drain. Add the butter to the drained potatoes to melt; aside. 2. While potatoes are cooking, put the bacon in a large deep skillet. Cook over medium heat until crisp, about 5 minutes. Remove the bacon with paper towels to drain, cool and crumble. Leave 2 tablespoons fat droplets in a skillet and return to heat. 3. Cook onion and garlic bacon drippings until tender, about 4 minutes. Add the rosemary and cook for 1 minute. 4. Mash the potatoes with melted butter. Mix crumbled bacon, onion mixture and milk, season with salt and pepper.
